Just a Creamy Black Bean Potato Soup Recipe

This makes 8 Portions Depending on what sized bowls you use, our bowls are pretty big.

Ingredients 

  • 2 cans Black bean drained and rinsed 
  • 7 Russet Potatoes 
  • 1 zucchini (You can use Carrots and Celery if you prefer) 
  • 1 Onion to fry
  • 4 Garlic pieces or
    2 teaspoon? Powder
  • 1 sml Rotisserie Chicken (3 decent sized cooked Chicken breast)
  • 1 or 2 Can mushroom soup (or any Cream of can)
  • 3-4 cans water from mush soup can
  • butter
  • (optional) some cream, some sour cream, Chicken and beef broth
Instructions
  1. Once drain and rinsed, mush all Black Beans by food chopper, or anyway as long as you get some creamy Mushed beans, I add 1 Tablespoon of Sour cream to help creaminess
  2. Dice Russet Potatoes to Boil in pot of water if all doesn't fit that's fine, just boil what you can, Set on High to boil, then Cover, put on Low and sit for 15-20 mins, they are going to be mashed.
  3. Mash potatoes with 1-2tbs of butter , 1 tbs of cream or sour cream, Might want to Mash a bit extra as this is being mixed with the Black Bean mash If you know a way to make them Extra creamy smooth, then do so ( Fuck it, if you want just make 2 satchels of Instant Mashed potatoes do so instead)
  4. Mix the mashed Potatoes and Mashed beans together (I Guess this step can be Skipped as we are putting them in the same pot latter and have to mix it again, I just assume doing this will make it easier to mix with the last step) I set them aside for now.
  5. Chop the Onion, It's okay to cry onto them. We want them Diced, not to big, they are for a soup.  Dice the Zucchini, again do small bits, but enough to have a small bite.
    Put the diced Onion and Zucchini on the frying pan with some oil, Fry until Zucchini is Soft this can take about 10-15 mins on Medium high. Add in the Garlic and put on side.
  6. Take the Chicken and Chop it up, Eat the skin, or add it. If a rotisserie The White Meat should be enough, shred or leave the Quarters & wings for another meal.   Stir in with Onion and Zucchini Mix.
  7. In big pot Add 1 can of Mushroom soup(or any cream of can) (you can actually add two, i Just added one because that's all i had) add 3-4 cans of water(or Liquid Broth if you have) from the Mush can. Mix on Medium Until dissolved. Add the Potato and Bean Mash, and Stir/whisk until it's incorporated
  8. (More of a Tip than A Instruction) After there are no big chunks left add 2 tsp Chicken Broth powder, 1 tsp Beef Broth powder or Bullion cubes (if you didn't add Liquid broth) If You don't have any broth, just season more to taste with Pepper, Seasoning Salt, garlic powder, Italian Seasoning, Or even go Spicy if you're into that and add some Sriracha or Cayenne Powder, red chili flakes, Just be careful not to hide to much of the other Flavors, You can even add one cup of Shredded Sharp Cheddar Cheese.  Make sure you are not cooking any higher than medium, if you add cheese put down lower. 
  9. After you are satisfied with Base you can now Add your Onion, Zuchini, Chicken Mix!!
    And there is your Creamy Black bean Potato Soup
